I Need Some Easy To Make, Healthy Recipes!!

GUys, I need help. Im the worst cook in the world and my ex is coming over for dinner tonight so I want to make something yummy but healthy. I generally just have take-out or 2 min noodles but gota impress!
NB - I dont eat red meat!!

If you eat pork, try this. Get very thin sliced pork chops. Marinate in soy sauce for 1/2 hour. Grill on Foreman (3 mins) or BBQ (2-3 mins each side). Wait 5 - 10 minutes. Slice into strips. Combine with sliced onions, rice vinegar and pepper. Serve with white rice. Very yummy.

Girl....I cannot cook anything but rice in the rice cooker:) There is a show here in the States called "Semi-Homeade with Sandra Lee" and all she does is open cans and packages and microwaves everything. That's me, hon:) Angelbaby's idea sounds like something I would do. So.....safe to say you are hoping to ignite the flame with the ex????

ok guys!!! the ex story is as follows, but my oh my it could take ages to tell everything so ill just keep it short!!

we were together for 4 years but broke up 15 months ago after living together for a year. And these past few months we have been hanging out and having so much fun. I moved house on the weekend and him and his mates helped. Then we went out for the night and he told me he is still in love with me (i feel the exactly same, only kissed one guy since we broke up) and he's coming over tonight and i want it to be all romantic in hope that we will talk things over and finger's crossed (get back together)!

Hope you have fun tonight Sassyjoy. I'm not much of a cook, but San Fran has tons of Vegan and Vegetarian restaurants and my roommate is a Vegan, although I eat all meat except pork. Here's one of our favorites, hope you like it if you ever make it:
INGREDIENTS:
1 (9 inch) unbaked 9 inch pie crust
1/2 pound spinach, rinsed and chopped
1/2 pound red Swiss chard, rinsed and chopped
1 tablespoon vegetable oil
1 onion, diced
3 cloves garlic, minced
1/4 teaspoon curry powder
1 teaspoon dried parsley
1/2 teaspoon salt
1/2 teaspoon ground black pepper
8 small oyster mushrooms, chopped
2 teaspoons capers
1 (12 ounce) package firm tofu, cubed
1/4 cup skim milk
1/4 teaspoon ground nutmeg
1 pinch ground cinnamon
1 pinch ground cardamom
1/2 cup grated Parmesan cheese
1/2 cup shredded Cheddar cheese

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
Bake pie crust until lightly browned. Meanwhile, place spinach and Swiss chard in a steamer over 1 inch of boiling water, and cover. Lightly cook, about 5 minutes.
Heat oil in a large skillet over medium heat and saute onions and garlic. When onions become transparent add spinach and chard. Stir in curry powder, parsley, salt and pepper. Saute until spinach and chard reduce, then add mushrooms and capers. Stir and remove from heat.
In a blender or food processor, combine tofu, milk, nutmeg, cinnamon, cardamom and Parmesan cheese. Process until smooth and creamy. Pour over vegetables and mix well. Transfer mixture to the pie crust.
Bake in preheated oven for 20 minutes. Remove from oven and sprinkle top with Cheddar cheese. Bake for 10 more minutes, or until cheese is lightly browned.

yeah, we're just so comfortable with each other and know what the other loves and hates. we dont have to feel lik ewe need to impress. plus we just laugh all the time! we only broke up i think becos we were (are) young and we were so serious. i think it freaked him out. plus he had been unemployed for 2 years and that was starting to stress us both out!
